Pachakari Stew



Ingredients
  • Carrots - 20g
  • French beans - 20g
  • Potatoes - 20g
  • Coconut oil - 30g
  • Cinnamon - 5g
  • Cardamom - 5g
  • Cloves - 5g
  • Ginger juliennes - 10g
  • Sliced onions - 15g
  • Curry leaves - 10g
  • Sliced green chilies - 8g
  • Coconut milk(first extract) - 100ml
  • Salt to taste
Directions
  • Cut potatoes in to cubes, carrot and beans in to batons.
  • Blanch them separately and keep aside.
  • Heat coconut oil in handi and the cinnamon, cardamom and cloves.
  • Now add the Ginger juliennes, sliced onions, sliced green chilies and curry leaves.
  • Sweat the onions and add the vegetables.
  • Now add the first extract milk and cook the stew for some time
  • Check for seasoning garnish with curry leaves and serve hot.
