Ridge Gourd Chutney
Ingredients
- 2 medium sized ridge gourd ( peel the skin and cut into 1 inch pieces)
- 2 green chilli
- 2 small tomatoes( chopped)
- 4 - 5 cloves of garlic
- salt to taste
- chopped fresh corriander leaves
- 1/2 tsp cumin seeds
- tamarind a little (soaked in water)
- ingredients for tempering: curry leaves, red chilli halved, mustard seeds, asafetita powder, split urad dhal, cumin seeds
Directions
- cook the ridge gourd, tomatoes, green chilli, garlic cloves in a closed pan without any water. Add a little salt.
- After the vegetable is cooked, cool it and grid it into a coarse paste . while grinding add a few corriander leaves, cumin seeds and tamarind to the vegetable and grind.
- After tempering pour the tempered ingredients into the ground chutney.
