Brinjal Masala



Ingredients
  • 250 gms brinjal
  • onions 2 chopped
  • green chilli 1
  • ginger& garlic paste
  • chilli powder-1 tsp
  • turmeric powder- 1/2 tsp
  • corriander powder- 1 tsp
  • salt to taste
  • oil
Directions
  • Pour some oil in a pan and put all the ingredients for tempering, once the mustard seeds begin to crackle add the onions and green chilli. saute for a few mins.
  • Then add the ginger & garlic paste and the brinjals and mix well.
  • After a few mins add all the spice powders and salt and mix well for a few mins. close the pan and allow the brinjal to cook. do not pour any water. Let the vegetable cook in slow fire. stir it now and then and make sure it doesn't stick to the pan.
  • Can be eaten as a side dish with rice and sambar.
