Ingredients
  • boiled eggs ( 6-7) , brinjal-2 , drumstick 1
  • tomatoes -2 chopped
  • shallots -150 gms , garlic cloves -10
  • green chilli-1
  • tamarind -50 gms ( make puree)
  • chilli powder- 2 tsp
  • turmeric powder-1/2 tsp
  • ginger and garlic paste 2- tsp
  • corriander powder
  • salt to taste
  • fresh corriander leaves
  • oil - 2 tbsp
  • ingredients for tempering : curry leave, mustard seeds., red chilli, cumin seeds, split urad dhal.
Directions
  • First boil the eggs and keep aside.
  • Then pour some oil in a deep sauce pan and temper the ingredients for tempering when the mustard seeds crackle add the shallots and garlic cloves and saute them for a few mins, then add the ginger and garlic paste. after a min add the vegetables and mix well for a min.
  • Then add the chilli powder, turmeric powder, salt and corriander powder and mix well for a few mins till the vegetables are coated with the masala.
  • Now pour some water to cook the vegetables. close the lid and cook for a few mins. Once they are cooked add the tamarind puree and cook for about 10 mins till the raw smell goes and u get a nice thick gravy.
  • finally cut the boiled eggs in half and add them to the gravy.
  • garnish with fresh corriander leaves.
