Beach Style Tomato Bajji

This is a dish that belongs to coastal Andhra, esp Visakhapatnam (The city of destiny) and it is very popular in this region. You find this dish mostly at beaches, apart from this it is normally prepared at house  also. INGREDIENTS—

Tomatoes-4

Besan powder-150 gms

Water- as required

Corn flakes-1/2 cup (fried, add salt and red chilly powder)

Red chilly paste-1/2 cup (add water to get thin consistency)

Onions-2 chopped

Chilly powder-as required

Salt-as required

Lime juice-3 spoons

Roasted ground nuts-1/2 cup

Yellow peas-3 spoons boiled and salted

Oil- for frying

PROCEDURE—

First wash tomatoes and keep it aside. Take a bowl add besan powder and mix it with water and you should get a thin consistency, dip the tomatoes in this mixture and fry them in oil. Remove when they are golden brown in colour, these are called bajji’s. Cut these bajji’s into exactly half, remove the tomatoes from it. Take a bowl add these tomatoes, and crush them, in that add onions,

Corn flakes, red chilly paste, chilly powder, salt, lime juice, yellow peas and roasted ground nuts. Mix everything well and keep it aside. After frying the bajji’s when you take out tomatoes from it, you have the besan shells remaining. In these shells fill the prepared mixture and serve. It tastes really delicious and just sit back to munch.

SERVING TIP- Garnish with chopped coriander, onions and serve.
