RIght Friends its Mango time now.......... The king of all fruits delights our hearts and
Tastebuds.
Who can resist this lucious juicy fruit..... call it by any name Keri, Amba, Hafoosh,
Payirii, Kesari, Deseri, Rajapuri ......... A Mango is a Mango Is a Mango !!!!! yummy and
mouth watering.
Here is a Ambakaliyo ( not exactly pungent to be called a Pickle ) BUT a must have in all
parsi homes in this season.
Made of Raw or Semi-ripe Mangoes....... its just Great.
INGREDIENTS:
2 kgs. Sugar
1 1/2kgs Mangoes. If raw and small Slice lengthwise. If semi-ripe and and large
cut into 1" chunks.
300 gms tiny pearl onion skinned
10 smashed green cardamoms
5 cloves
3 pieces cinnamon each 1" long
3 bay leaves
1/2 Kg. Jaggery (gur)
pinch of salt.
Method:
Skin the mangoes and slice lengthwise or in cubes ( as mentioned above)
Place the sugar , jaggery and 1 cup water in a heavy bottomed pan on a low fire.
Add the whole spices and stir till the sugar and jaggery have melted. Add a pinch
of salt.
When the sugar jaggery mixture starts to bubble add the whole skinned baby oinons and
mangoes.
Lower the heat and cook till soft.
Cool and fill in glass containers. Refrigerate.
A Very SIMPLE and EASY MANGO PICKLE IN BRINE ( SALTED WATER)
2 large Raw mangoes
2 to 3 Tablspoons of coarse salt
one large glass Pickle Jar
pinch of Tumeric
2 to 3 long green chillies .... Optional.
cut the raw Mangoes into half lenghtwise discard the seed
Make slices of about 1/2" thickness and drop the slices into the glass jar.
Add the green chillies ( optional ), coarse salt and the tumeric and stopper the Jar.
give the bottle a good shake till the mango slices are all coated with the salt.
Let it sit for a day.( Keep shaking the bottle whenever you can.) You will find a Brine ( Salt water ) formed at the bottom and the slices of mango softened.
Shake the bottle well again and start eating.
I tell you its a treat the kids head for each time they got in from the heat outside .
I had to keep 3 big jars filled as their friends would all troop in after college and make a bee-line for the kitchen. They used to call it " Paani- Ka Acchar "
