Ingredients
5 types of vegetables : each ¼ kilo
Onion : ¼ kilo ( cut finely )
Oil : for seasoning
Mustard : 20 gm
Green Chilli : A10 ( slit into 2 )
Fenugreek : 1 tsp
Chana dal : 25 gm
Ginger : 10 small pieces
Turmeric powder : a little
Chilli Powder : as needed
Salt :as needed
Rice : 2 cups
Water : 3 cups
Coriander leaves : to garnish
Mint leaves : to garnish
Curry leaves : a little
Method
Cut vegetables, coriander leaves and mint leaves.
Heat oil in the pressure cooker.
Add mustard and when it splutters add Chana dal.
When the chana dal becomes red, add fenugreek, green chilli, onion and saute.
Add vegetables and fry well.
Add ginger, turmeric powder, salt , chilli Powder, curry leaves and water.
Wash rice and add it to the water.
Close the cooker and when it whistles remove from the stove.
Garnish with coriander and mint leaves before serving.
Onion raitha is a suitable side dish for this rice.
