Payassam (Bengali Style)

Payassam (bengali style):
 
Almost everyone thinks and feels that payassam is very rich and high in calories. Here is my recipe for payassam that is not only healthy but also low in calories, as it does not use ghee or sugar. It does not make use of any artificial sugar too.
 
Ingredients:
 
  1. Skimmed milk – 1 ltr
  2. Date Palm Jaggery – 50gms (in case you do not get Date palm jaggery better known as khajur gud or patali gud you could use date syrup.)
  3. rice – half teacup
  4. Cashewnuts 5- 6
  5. badam (Almonds)  5 – 6
  6. Kishmish 10 – 12
  7. Elaichi for flavour
 
Preparation:
 
  1. Soak the badam in water for about a couple of hours. Skin the badams and cut into thin stripes.
  2. Cut the cashewnuts into small pieces.
  3. Soak the kishmish and cashewnuts in water for about half an hour.
 
Home made date syrup:
 
  1. Soak seedless black dates in a little water for about five to six hours.
  2. Grind the date and water mixture to a smooth paste.
  3. Store in refrigerator.
 
Procedure for making payassam:
 
1.      Pour the skimmed milk in a kadhai and bring to a boil.
2.      Wash the rice thoroughly and add the washed rice to the boiling milk.
3.      Add the soaked cahewnuts and kishmish
4.      Add the cut badam
5.      Keep stirring until rice is cooked and the milk lessens by half.
6.      Add the palm jaggery and keep stirring until it dissolves. (In case you are using the date syrup add about 7 – 8 table spoons and check the sweetness before adding more)
7.      Add a small pinch of crushed elaichi for flavour.
8.      Pour the payassam is a serving bowl.
9.      Refrigerate for about 3 – 4 hours before serving.
 
Enjoy this yummy payassam as a sweet dish after meals or simply indulge in it whenever you get the craving!!!
