Ingredients:
1/3 cup vegetable oil
2 tbsp lime juice
2 cloves garlic, crushed
1 1/2 tsp finely chopped fresh oregano (or 1/2 tsp dried)
1 tsp salt
1/2 tsp (or more) grated lime rind
1/4 tsp crushed dried red chilies
1/4 tsp pepper
Method:
1. Marinate up to 2 kg (4 lbs) of chicken pieces for one hour at room temperature.
2. Turn occasionally.
3. Reserve marinade and use it to baste chicken while it's grilling.
