Shobana Sunder recently wrote to me asking whether I know any banana recipe other than muffins and cakes which would use up a lot of the fruit but wouldn't require eggs. I suggested fruits and almond halwa. But since my recipe required condensed milk, a rare commodity in Krishagiri or Hosur, she couldn't prepare it
Here is a banana recipe that wouldn't need any milk, condensed or otherwise but as it is clear from the title needs rum.
Ingredients: Bananas. And for each banana you need a two tablespoons of butter, one tablespoon of rum, a cup of hung curd,a cup of orange juice, two tablespoons of sugar, 1/4 teaspoon of cinnamon powder, one tablespoon of powdered sugar, i teaspoon of vanilla essence. two teaspoons of grated orange rind.
Melt the butter in a pan, add the orange juice, rum, sugar, cinnamon powderkeep stirring until the sugar dissolves . Let the mixture thicken and reduce to 1/4th of its quantity. They toss in sliced bananas, keep turning them until they are well coated. Let them remain on medium heat for another minute. Make sure they dont turn mushy.
In a bowl, take the curd add vanilla essence and powdered sugar. Top it with coated bananas and grated orange rind.. Chill.
If you arent calorie conscious use double cream. Instead of hung curd. May god keep your cholestrol levels down!
