Try out this hot soup on a cold wintery day.
Ingredients
Red pumpkin 250 gms
Onion 1 large
Vegetable stock 1 1/2 cups
Skimmed milk 1 cup
Lemon juice 2 tsp
Garam masala powder 1/2 tsp
Pepper powder 1/2 tsp
Salt to taste
Oil 1 tsp
Bay leaves 2
Fresh parsley few sprigs finely chopped.
Method
Peel and grate the pumkin.
Peel and chop the onion.
Heat the oil in a pan, add the bay leaves and the onion and saute for a few minutes.
Add the pumpkin and saute for a few more minutes.
Add 1 cup of the vegetable stock (or water, if stock is not available) and cook till soft.
Cool, remove the bay leaves and blend into a puree.
Heat the pureed pumpkin, add the remaining stock ( or water).
Add the garam masala powder and mix well.
Add the milk, and bring to a boil.
Remove from fire and after a few seconds add the salt, pepper powder and the lemon juice.
Garnish with the fresh chopped parsley and serve hot.
