When we feel lazy to go into kitchen to whip up a full course meal,one pot meals such as pulao's, khichuris come to our rescue.And less dishes to wash afterwards is a bonus!!
7tbsp oil
1tsp cumin seeds
2 bay leaves
2 sticks cinnamon
4 brown cardamoms
5 cloves
3 medium carrots,peeled and cut into long strips
100gms french beans,cut diagonally long
1 cup frozen/fresh peas
Some cauliflower chopped into medium pieces
2 potatoes,peeled and cut into medium
1/2 aubergine sliced thick or 2 indian brinjal chopped medium
3 cups Basmati rice
salt
3 and half to 4 cups water
Method
Heat oil in cooker,add jeera,bay leaf,cinnamon,elaichi,cloves.Stir for few seconds.Can also usadd some grated ginger/cilantro/mint leaves here and fry till lightly fragrant .
Add vegetables,stir fry for 2 minutes.Add rice,fry till it turns opaque.
Add salt and water.Stir once.Sprinkle 2tsp ready made pulao masala/garam masala powder into it though it's optional.
Close cooker.Bring to full pressure on high heat.Reduce heat and cook for 3 minutes.
Remove cooker from heat.Allow to cool a little and now serve the pulao garnished with little cilantro
