THE POTATOE ..... SUCH A HUMBLE VEGGETABLE Yet SO FILLING AND SATISFYING.
Members may think WHAT IS SO GREAT about MASHED POTATOES!!!!!!!!!!!!!!!! BUT you got to taste this one TO KNOW SO... one of my mothers favourite and passed on to me :) . Thank you MOM . My family swear by it .
for 4 people you will need around 4 Big potatoes or 8 medium to small ones.
INGREDIENTS :
Potatoes ( 4 big or 8 medium ones)
Milk 1 to 2 tea cups . Depends on the consistency desired.
Salt / Pepper to taste
Cheese paste 2 tbsps. 2 tablsps Butter.
Green Chillies , 3 chopped small ... (Optional).
METHOD:
BOIL THE POTATOES TILL THE FORK OR KNIFE SINKS THROUGH. ( THAT WAY YOU USUALLY KNOW THAT IT IS DONE ) SHOULD TAKE AROUND 10 MINUTES IF THE POTATOES ARE NOT FROM THE COLD STORE .... A LITTLE LONGER IF THEY ARE.
ONCE THE POTATOES ARE BOILED ,PEEL AND MASH THEM AT ONCE AND MIX IN THE CHEESE AND BUTTER
ADD 1 CUP MILK AND MIX WELL . THEN PUT IT ON A LOW GAS AND KEEP STIRRING TILL ALL THE MILK IS FULLY ABSORBED . IF YOU FIND IT A BIT THICK ADD IN A LITTLE MORE MILK FROM THE 2ND CUP. BUT DO MAKE SURE YOUR CONSISTENCY DOES NOT BECOME TOO LIQUIDY. IT SHOULD BE A BIT ON THE THICKER BUT SMOOTHER CONSISTENCY.
CHECK THE TASTE FOR SALT AND ADJUST AS REQUIRED.
POUR OUT THE MIXTURE INTO A BOWL SPRINKLE A BIT OF FRESH PEPPER AND FINE CUT CHILLIES.
SERVE HOT EITHER WITH TOASTED BREAD STICKS OR AS A SIDE DISH WITH ANY NON VEG . DISH .
USUALLY I serve it with sweet sour dry mutton mince or sweet sour soya mince. just the right combo.
and family love it.
ANOTHER OPTION IS TO SPREAD IT ON YOUR PIZZA BASE AND ADD ON ANY FILLING OF YOUR CHOICE.
IF LEFT OVER YOU CAN SPREAD IT ON YOUR SANDWICH BREAD AND ADD CUT TOMATOES AND CUCUMBER AND MAKE DELICIOUS SANDWICHES............. JUST USE YOUR IMAGINATION...... THE KIDS WILL LOVE IT.
