Legumes, also known as beans have such an interesting flavor of just blending together to whatever they are added to. say Garbanzo beans, pinto beans, kidney beans. lima beans, black eyed peas..

Before I present to you all my "Vegetable Bean Bujji".. here are some reasons why one should include 'Legumes' in their diet...

.... Kidney beans are a very good source of cholesterol-lowering fiber, as are most other beans. In addition to lowering cholesterol, kidney beans' high fiber content prevents blood sugar levels from rising too rapidly after a meal, making these beans an especially good choice for individuals with diabetes, insulin resistance or hypoglycemia. When combined with whole grains such as rice, kidney beans provide virtually fat-free high quality protein. But this is far from all kidney beans have to offer. Kidney beans are an excellent source of the trace mineral, molybdenum, an integral component of the enzyme sulfite oxidase, which is responsible for detoxifying sulfites. Just one cup of cooked kidney beans supplies 177.0% of the daily value for molybdenum. Sulfites are a type of preservative commonly added to prepared foods like delicatessen salads and salad bars. Persons who are sensitive to sulfites in these foods may experience rapid heartbeat, headache or disorientation if sulfites are unwittingly consumed. If you have ever reacted to sulfites, it may be because your molybdenum stores are insufficient to detoxify them.....

[ an extract about Kidney beans in particular by "World Healthiest Foods" ]

Ingredients:

Red Kidney Beans - 1 can
Vegetables - Broccoli, Cauliflower, Beans, Carrots
Eggs - 3
Green Chilies - 2
Chopped Garlic - 1/2 tbsp
Onion (chopped) - 1
Tomatoes (chopped) - 2
Cumin seeds - 1tbsp
Grated Coconut - 2 tbsp
Coriander powder - 1 tbsp
Salt - to taste
Red Chilli Powder - 1/2 tbsp
Turmeric - 1/4 tbsp
Oil - 2 tbsp

How to make:

1. Take oil in a pan, add Cumin seeds. Then chopped garlic and add onions. Saute until brown.
2. Then add tomatoes, vegetables and Cook till tender. Add Kidney beans and mix the contents well.
3. Season with salt, turmeric, red chili powder, coriander powder and Cook for few minutes.
4. Beat the eggs in a bowl and add to the mixture. Mix the contents so that the flavor of eggs blends with the rest of the curry.
5. Finally add grated coconut and voila, the curry is ready..:)
6. Serve with hot rice or chapathis. or even bread.
