Mixed Vegetables rice noodles:

Rice noodles packs are available in all leading stores. In south India it is known as Sevai or Idiyappam a similar variety

Method of preparing the rice noodles:
Boil water till it bubbles. Spread the noodles in a broad container. Pour the water till it gets immersed.
Close it tightly with a lid.. After 5 minutes drain it through a sieve. Allow it to cool.

Method of preparing mixed vegetables:
Cut any vegetable of your liking. It can be carrots, broccoli, mushrooms, capsicum, baby corn, cauliflower etc.
Heat a kadai. Pour 2 spoons of oil.
Add saunf, bay leaf, onion pieces, green chillies.
Add the vegetables. Add salt and turmeric powder. cook till soft.
You can also do this in microwave.

Method of preparing mixed vegetable rice noodles:
Mix the cooked vegetables with rice noodle and slowly split them into small pieces with the ladle.
Mix well.
you can add any sauce or ketchups and add to taste.
So easy yet so tasty.

But preparing sevai was a laborious task those days.
Even today i dread to think of the Vaikunda Ekadasi day when my mother-in-law used to say that she
would not eat meals(rice and sambar) but only palagaram(tiffin variety) and would bring the iron sevai nazhi.
I used to be very fragile and thin and would find it very difficult to press the sevai through the equipment.
But she would make lot of this and prepare a variety of sevai namely, lemon sevai,coconut sevai,jaggery and
curd sevai.Seeing my plight my husband put a ban on this tiffin.After many years it was revived thanks to the
ready sevai packs.
Mehtod of preparing sevai;
Soak a cup of parboiled rice for 8 hours in water.
Grind it like idli batter.
Steam it like idlis and put each in to the sevai nazhi and squeze while it is hot.
Or it can be prepared using a kadai.
