Cheese and kids go hand in hand,i think.All those tiny tots who love to nibble on cheese wld absolutely love this snack.It's good for their bone development as cheese is rich in calcium and these cookies can also be given to those children whose teeth are just cutting and need something to rub on their gums and keep chewing all those toxic toys.These cookies can be chewed on by them easily instead of those toys harmful which are harmful to their health though side effects can be messy mouths and messy floor! Now don't say u weren't warned!!
Cheese cookies for kids(inspired from nigella lawson's recipe)
Yields: 20 pcs
Ingredients
100 g Cheddar cheese, grated
25 g soft butter (salted is fine)
50 g plain/all-purpose flour
1/4 tsp baking powder
Preheat the oven to 200C/400F.
Place all ingredients into a food processor and blitz until comes together. If you don't have a food processor, then mix grated cheese, soft butter chunks, flour and baking powder in a bowl and mix using hands to mix thoroughly to form dough. Form a flat disc, wrap in a clingfilm and let it rest in the fridge for 15 minutes.
Roll the rested dough on a floury surface to about 3 mm in thickness, and cut out any shape you fancy with a cookie cutter like feet shape,stars,circles or anything. You can keep re-rolling this dough and cutting out shapes until it is all used up.
Put them on a lined baking sheet and cook in the preheated oven for 10 minutes, until slightly golden on edges Transfer the cookies to a metal rack and allow to cool
IMPORTANT:Overcooked cheese cookies taste bitter, so take them out of the oven when still light golden in colour.
