Naans are famous indian bread and are now available everywhere.
We can also get readymade frozen versions that can be microwaved simply and eaten.They can also be made in pressure cooker by sticking them to the walls of cooker about which I wrote at the end.
This hit recipe is for those who love to bake their own bread in their ovens! Other than oven, I tried only pressure cooker method;the other two methods I didn't try.
Ingredients
450gms plain flour
8tbsp curd
180ml milk
2tbsp solid butter
1/4 tsp salt
2tsp castor sugar
2tsp bak powder
2tsp melted butter
2tsp onion seeds/kalonji
2tsp soda bicarb
Method
1.Sieve the flour,sugar,salt and baking powder.
2.Rub in the solid butter into the flour and make a well in the centre.
3.Mix the curd and soda bicarb together and pour into the well.Mix and knead into a soft dough with milk and little water if reqd.
4.Add melted butter and knead again.Cover and leave aside in warm place for 3-4 hrs
5.divide the dough into 8-9 portions,roll out on a lightly floured surfavce,using your fingers stretch the rolled dough into thick oval/oblong shapes.
6.Brush with melted butter/oil and sprinkle kalonji
7.Bake in preheated oven at 250 degree centigrade for 15-20 mins.
Note:The following are some other methods to cook naan
A.PRESSURE COOKER METHOD
1.Wet one side of the Naan after step 6.
2.Mean while heat the pressure cooker well without the lid(select an open mouth cooker ).
Place the cooker side ways on the gas flame , so that the bottom of the naan gets cooked.
3.Then invert the cooker on the flame so that the top of naan gets cooked with the direct flame .
Again place the cooker side ways on the flame so that the bottom of the naan gets cooked properly .
Remove the naan and apply ghee n serve hot .
B.TAWA METHOD
1. use only iron tava to make this. iodised or non stick tava will not work with this method. In the absence of iron tava you can use the same method with a pressure cooker.
2.Roll the naan into oblongish shape with the rolling pin or hands.
3.Generously apply some water on the side of naan facing you. Lift the naan and place it on hot tava - water side down. Press along the edges with your fingers so that the naan seals to the tava.
4.In few seconds you should see the naan ballooning in some areas. This is the time to lift the TAVA and expose the surface of the naan directly onto the flame.
5.preferably use the largest burner so as to distribute the heat over a large area evenly. You can start with a small burner if you are doing it for the first time. Keep the flame on high and keep moving the tava so that the naan gets cooked evenly.
6.Keep checking,then take the naan from the tawa and cook it lightly on the reverse either on flame like a phulka or on tawa itself.
7.Scrape it off the tava, apply butter/ghee and serve !
C.DOSA STYLE
cook the nan one side by covering the pan/tawa(how we do for dosa) then flip the nan and put it directly in the fire(like phulka). The nan just puffs up, then remove it from fire and apply oil/butter on one side.

am really glad for this. have been inquiring around for how to make naan since i got back from kolkatta.
there, i remember that after getting the dough done at home ma used to send it through to the local bakers oven to have it baked .
