Saambhar for idli
Ingredients
Thuvaram paruppu( red gram dal ) : 150 gm
Small onion : 100 gm
Tomato : 7
Eggplant : 100 gm
Potato : 2
Green chilli : 6
Tamarind : a little
Drumstick : 1
Oil : 4 tsp
Mustard : 1 tsp
Ulunthu ( black gram ) : 1 tsp
Asafoetida : ¼ tsp
Dried red chilli : 1
Coriander leaves : a little
Curry leaves : a little
Salt : as needed
Method
Soak tamarind in water and prepare extract.
Cook thuvaram paruppu( red gram dal ) till soft.
Cut vegetables lengthwise.
Cut onion and tomato into pieces.
Add the vegetables, onion and tomato to the dal and cook.
When the vegetables are ¾ cooked, add salt and tamarind extract.
Heat a little oil in a frying pan.
Add mustard, black gram, asafoetida, dried red chilli, curry leaves.
When the mustard splutters, add to the saambhar.
Let the saambhar boil for a few minutes.
Remove from the stove and add cut coriander leaves.
