Paalaadai - cheese
Ingredients
Basmati briyani rice : 1 cup
Paalaadai ( cheese)grated : ½ cup
Peas : ¼ cup
Carrot ( cut finely ) : ¼ cup
Onion ( big ) : 3
Ghee : 3 tbsp
Curry leaves : 2 stems
Coriander leaves ( cut ) : ½ cup
Ripe chilli ( small ) : 2
Lime : ½
Turmeric powder : ½ tsp
Salt : as needed
Cinnamon : a little
Cardamom : 1
To grind
Cumin : 1 tsp
Small onion : 4
Green chilli : 2
Cloves : 3
Garlic : 4 pods
Pepper powder : ½ tsp
Ginger : 1 inch
Grind the above to a paste.
Method
Wash the rice and transfer it to a strainer.
Cut an onion finely.
Cut other onions lengthwise and fry in ghee till golden.
Heat ghee in a heavy bottomed vessel.
Add cinnamon, cardamom, curry leaves, finely cut onion, ripe chilli and fry for a minute.
If needed, cashew can also be added.
Add rice and stir well.
Add 1½ cups water, ground paste, salt, turmeric powder and transfer the contents to a cooker and cook.
When the rice is cooked and is still hot, add grated cheese and stir well.
Add coriander leaves, lime juice and stir.
Add fried onions and serve.
