Wash the peels of the opranges,remove the rind and cut into small pieces,Cut the green chillies lengthwise.Add oil in the kadai,when the oil is hot add the mustard and urad dhal when the mustard crackles and the urad dhal turns red add the cut chillies and the cut ornge peels.Keep stirring for two minutes.Now add little water to the mixture in the kadai so that the peels will cook.Add one cup water to the tamarind paste and mix well .Add the tamarind water to the kadai,add salt,haldi powder,fenugreek powder and asafotita.Allow the vathal kuzhambu to boil for eight to ten minutes on low flame,add the grated jaggery.Once you get the required consistency remove the khuzhambu ibn a vessel ,Vathal khuzhambu made with orange peels has a distinct flavour and taste.
