Raw rice - 1 cup Boiled (Raw) rice - 1 cup Black gram (Urad dhal) - 1/4 cup Onion - 3-4 Green chillies - 4-5 Mustard seeds - 1 tsp Cumin seeds - 1/4 tsp Curry leaves - 1 little Oil - as required Salt to taste Soda - bicarb - A pinch (Cooking Soda)
Method:
1. Wash both rice and dhal, soak separately soak in water for 6 hours. 2. Grind dhal without more water till it is very soft batter. 3. Grind rices, adding a water from time to time to a coarse batter. 4. Mix together dhal and rice batter, add salt and mix well. Keep to ferment over night. When the mixture double is size and should be thick and flowing consistency. Add soda - bicarb and stir it. 5. Chop onion and green chillies, coriander leaves, curry leaves finely. 6. Heat oil and put mustard seed and cumin seeds fry and pour into the batter. stir well. Now add chopped ingredients and one more time stir again. 7. Heat paniyaram moulded tawa, pour little oil in a moulds and pour half ladleful batter(or enough batter). 8. Cover and cook till under crisp. Then turn over up and cook on both sides. Serve hot with coconut chutney.
