Ingredients
Black gram dal : 200 gm
Sugar : 750 gm
Saffron : 1 gm
Lime : a half portion
Cornflour : 100 gm
Raw rice : 50 gm
Cardamom : 5 gm
Lemon yellow colour : a pinch
Ghee : 200 gm
Refined oil : 500 gm
Cloth to prepare jangiri
Method
Soak black gram dal, raw rice in water.
Grind it well.
In a frying pan add sugar, 2 cups of water and let it boil.
Remove syrup from stove, add cardamom, saffron and ghee.
Heat oil in a frying pan. Add ghee for flavour.
Mix cornflour, lemon yellow colour with dal batter.
Using the jangiri cloth press jangiri into the oil.
The jangiri should have 3 rounds and 21 or 27 rings.
When it is fried golden, remove from oil.
Immerse the jangiris in syrup and after soaking it for 2 minutes, remove from syrup.
Tips
We can try pressing the jangiris in a vessel of water, before pressing it into oil.
The batter in water can be reused.
