Fenu greek Kanji


Ingredients required: For making two cups of kanji
Fenugreek seeds:Two table spoonsful
Par boiled rice        :Two tablespoonsful
Jaggey   grated       :Three table spoonsful
Or   Butter milk    ;ONE CUP
Salt to taste

How to make:
The parboiled rice and fenugreek seeds should be soaked for 6 to 8 hours.Preferably they could be soaked in water the previous night.Next morning/or when the seeds are soaked put them in mixi, grind  well adding water-one cup of water  more if required ,Rice will take more water to cook.Keep on the stove on low flame.Keep stirring and when the rice and the fenu greek  paste mixed in water is cooked,you will know,the colour would change,add the grated jaggery to the mix stir till they blend well.Remove in a vessel.Instead of adding jaggery which some diabetics may not like,you may add fresh buttermilk and salt to it.Fry a few mustard seeds if buttermilk is added,and add it to the kanji.This kanji can be taken by diabetics two or three times a week as a midmorning refreshment.
