Spinach (Palak) - 5 bunches Methi leaves - 3 bunches Potatoes - 2 Red pumpkin - 1 small pieces Brinjal - 2 medium Tomatoes - 2 ( chop finely) Bengal gram dhal - 1 cup Green chillies - 8 (chop finely) Onions - 2 (chop finely) Oil - 3 tbsp Salt to taste Ginger-garlic paste - 1 tbsp
Method :
1. Trim spinach and methi, chop coarsely. 2. Potatoes and red pumpkin peel and chop along with Brinjals. 3. Soak Bengal gram dhal for 1/2 an hour and drain it. 4. Pour enough water to cover the spinach, methi and vegetables, salt, Bengal gram dhal. 5. Cover and cook in medium flame untill the ingredients become soft. 6. Mash vegetables, Spinach, dhal mixture till well blended. 7. Heat oil in a pan, add onions and green chillies fry till light brown. Add ginger garlic paste again and add chopped tomatoes fry till oil over separates. 8. When it is mashed vegetable mixture pour tempered ingredients over Sai bhaji. Serve hot.
