A quick recipe of rolls made with rumali-rotis ( ready made ) and home cooked dry mutton curry.....I use left over curries also as a filling......
One could use chicken in place of mutton ....this would reduce the calorie content to quite an extent....
Ingredients for the curry----
500 gms boneless mutton.( cut into cubes )
4tbsps of ground unripe papaya
1tbsp of garlic
half tsp ginger paste
4-5 green chillies
1tbsp red chilli powder
half tsp coriander powder
1tsp cumin powder
1tsp garam masala powder
salt to taste
3tbsp sunflower oil / ghee
2 large onions , chopped
1tsp poppy seeds and sesame seeds
1tbsp vinegar
1. Marinate all the ingredients together in a large bowl EXCEPT FOR THE CHOPPED ONIONS. Marinate it for about 5hrs.
2. Heat oil / gheee , add onions and saute' over medium heat. Add the marinated meat and cook on a low fire till done.
3. Add khus-khus and sesame seeds and set aside.
4. Heat a piece of charcoal on fire ...till red hot and drop the put it in a stainsteel small bowl. Now put this bowl in the centre of the cooked meat bowl.....pour 1tsp of ghee instantly over the charcoal and cover the bowl with a lid .Leave it to stand for 15mts. this gives a smoked flavour to the mutton mix....
For the ROTI ROLLS
4 Rumaali rotis
Half cup green chutney
2 large chopped onions.
2 tbsps chopped mint leaves.
Aluminium Foil
To make the wraps...Divide the mutton mixture into 8 portions. Make the rotis half . Spread chutney on each portion of rotis...place mutton mixture , sprinkle chopped onions and mint leaves. ROLL UP AND WRAP IN ALUMINIUM FOILS. Serve hot.
These can be made a day earlier and kept in the fridge. Just heat it in a OTG ! ( DONOT RUN IT IN A MICROWAVE ).
