The Bountiful Beans!
Ingredients required:For four servings
Tender Beans :Two hundred grams
Onion-big- :one
Ripe tomotos :three
Red chilli powder “one teaspoonful
Ginger&garlic paste: one table spoon
Haldi powder:one teaspoon
Salt to taste
Oil :two to three table spoons
Dhania powder:one teaspoon
Asafotita;one pinch
Mustard seeds and urad dhal for seasoning
Curry leaves: a few leaves
Coriander leaves:A few leaves washed and cut into fine pieces
How to make:
Wah and cut the beans into medium sized pieces.cut the onion into fine pieces.so also the ripe tomotos,cut them and keep aside.Cook the beans till the pieces are well cooked.strain extra water and keep aside.
Take oil –one and a half table spn-in a kadai,heat the oil,add mustard and urad dhal.When the mustard cracles and the dhal turns red add the onion and start rtirring keeping the kadai on low flame.Add the garlic ginger paste to it after a minute and keep stirring.After two minutes add the cooked beans to the mix and stir for aminute or two.Then add the cut tomoto pieces,salt ,haldi powder,dhania powder and the redchilli powder to the mix and keep stirring on low flame till you get the required consistency.If the subzi thus made is very thick add water little by little,even when you are stirring them together so that the subzi blends well.Now the Bountiful Beans is ready to be served.This is an excellent side dish for chappathi and curd rice as well.
This dish may be called ‘Bountiful’ because garlic&ginger paste and dhania powder helps in digestion,good for cholestrol control,onion and tomoto makes the dish tasty,beans is ofcourse protein rich.
