Ingredients :

Rice - 2 1/2 cups
Peanuts - 1 cup (Roasted)
Tomatoes - 3
Red chillies - 3
Oil - 3 tbsp
Salt to taste

Grind together :

Red chillies - 4
Ginger - 1 small piece
Garlic - 6 - 8 flakes
Grated dry coconut (Copra) - 2 tbsp


Method:

1. Wash the rice and soak in water for 20 minutes.
2. Soak red chillies in water for 30 minutes.
3. Chop tomatoes finely.
4. Heat oil in a pressure pan, add ground paste in it. Fry for a minute, add soaked rice, salt and 4 cups of water.
5. Bring it to boil, then add peanuts and chopped tomatoes.
6. Cook covered in a medium flame for 10-12 minutes.
7. Garnish with soaked red chillies and tomato slices, coriander leaves, peanuts and serve hot.
