| For eebishop@nbnet.nb.ca (eebishop) who requested recipes Using Mangos MANGO SHERBET (Helado de Mango) from:Better Homes and Gardens Mexican cook Book 1 cup water 1/2 cup sugar dash salt 2 mangoes, peeled and sliced 1/2 cup light cream 1/4 cup lemon juice 2 egg whites or 4 tablespoons of Just Whites 1/4 cup sugar In saucepan combine water, the 1/2 cup sugar and salt. cook 5 minutes; Cool. In Blender container combine Mangoes and cream. Cover, blend till smooth. Stir in cooled syrup and lemon juice. Freeze in one 6 cup or two 3 cup refrigerator tray till partially frozen. Beat egg whites to soft peaks. Gradually add the 1/4 cup sugar, beating to stiff peaks. turn frozen mixture into chilled mixer bowl. Break into chunks, Beat smooth. Fold in beaten egg whites. Return to cold tray. Freeze firm. Makes 6-8 servings. Note: if using Just Whites, make sure the water is warm, It takes a while to dissolve, about 5 minutes of beating.
