There is a story about aviyal's origin, I read in a book.
Once, there was a king in kerala who loved feasts.
one day he visited the kitchen to see what was being prepared that day.He saw that the preperation was over and the chief cook told him they were ready to serve food.But the king said he wanted to taste a new dish the chef has not tried till that day.chef was taken back and wondered how he would turnup a new dish. He went through the things he had. Only a few vegetables ,coconut and some chillies and curry keaves were left over after the prepared lunch. He did not hesitate, no time to buy anything, so manage wiyh what he has, he thought. Me had a few raw bananas, yam, cucumber,drumstick, mango,and chillies.and curryleaves.He cut all the vegetables to the size of little finger ,scraped coconut.cooked vegetables added salt and ground coconut with the greenchillies coarsely added this to the vegetables stirred well, added curd which was there and garnished withcurry leaves and topped up with coconut oil. Mixing well presto ! new dish was created.King tasted it and praised the chef.That is
the origin of aviyal .
We prepare aviyal another way.The original is a side dish. But in our house we prepare it like sambar, molakootal, etc main dish to go with rice.
Cut the vegetables lengthvise cook ,add salt, lime size tamarind [take out pulp in one cup water] water boil well, then add the coconut, greenchillies well add to aviyal boil well take out from stove and add 1 tbsp coconut oil and curry leaves.
Aviyal can be prepared with vegs like potato,carrot, beans, peas, and chowchow.as a side dish and main dish.
