
Penne in tomato sauce
Another healthy dish with the goodness of tomatoes, paneer and baby corn
Ingredients:
Penne – 100gms
Water – 1.25 lts.
Oil – 2 tablespoons
Garlic paste – one table spoon
Onions – 2 - 3 medium sized
Tomatoes – ½ kgs
French Beans – 10 – 12
Baby corn – 3 – 4 or American Corn – ½ cup
Carrot – One medium sized
Paneer – 100gms
Tomato ketchup – 3 tablespoons
Salt to taste
Oregano – one pinch
Red chilly powder – ½ teaspoon
Preparation:

Cut the French beans, babycorn and carrots – the way you do when you make pulao. Steam cook the french beans and babycorn until tender.

Mash the paneer into small crumbs and keep aside.

Boil about one litre of water. Add the penne. Keep aside for about ten minutes, until the penne is tender. Drain the excess water.
Procedure for the Tomato Sauce:
1. Chop the onions and keep aside.
2. Blanch the tomatoes, peel and deseed them.
3. Chop the tomatoes and keep aside.
4. Heat oil in a kadhai.
5. Add the garlic paste and sauté.
6. Add the chopped onion and cook on medium flame until red and tender.
7. Add the chopped tomatoes and mix well.
8. Cook for 2 – 3 minutes.
9. Add the tomato ketchup, salt, red chilly powder and oregano.
10. Mix well and cook for another 2 – 3 minutes.
11. Your Tomato sauce is ready.
The finale’

Take a microwaveable casserole.

Empty the drained penne into it.

Cover the penne with paneer crumbs.

Add the steamed vegetables.

Mix well.

Top this mixture with the tomato sauce.

Microwave for 3 minutes.
In case you do not have a microwave, add the penne, vegetables and paneer crumbs to the kadhai in which you have prepared the tomato sauce. Mix well and cook for about 2- 3 minutes.
Your penne in tomato sauce is ready. Serve hot.
