NextEggplant Pizza Recipe
Brinjal (eggplant) is one of the less liked vegetables. Try out this and u will not be disappointed.
Ingredients
Brinjal (eggplant) large sized 2
Onion 1
Green capsicum 1/2
Red capsicum 1/2
Yellow capsicum 1/2
Maida ( plain flour) 1/2 cup
Tomato sauce 1/2 cup
Garlic 3-4 cloves
Oil 4 tblsp
Grated cheese 1/2 cup or to taste
Salt to taste
Pepper powder 1/2 tsp
Method
Wash the brinjals and cut them into 1 cm thick rounds.apply some salt an keep aside for 10 mins.
Peel and slice onion. Cut the green, red and yellow capsicums into thin strips.
Chop the garlic.
Mix the salt and pepper powder with the maida flour.
Wash the brinjal slices and pat them dry with kitchen towel. Coat each slice with the above seasoned flour.
Heat 3 tblsp of oil in a pan and shallow fry the coated brinjal pieces till golden brown on both sides but still firm.
Transfer the fried brinjal pieces into an absorbant paper.
Heat 1 tblsp of oil, add the garlic, saute. Then add the onion, and the capsicums and fry for a minute.Add salt to taste.
Spread the tomato sauce on the fried brinjal( eggplant pieces), Spread the onion capsicum mixture over it. Cover with grated cheese and grill till the cheese melts.
Serve immediately.
