SHRIKHAND POLI
You love Shrikhand, don’t you? You’ve had a hearty festive meal of Shrikhand-Puri and there is plenty of Shrikhand left. Now what do you do with left over Shrikhand? Simple. Make Shrikhand-Poli and put it in your kids’/your spouse’s/your own lunch box the next morning.
Take the left over Shrikhand out of the fridge, keep for some time till it reaches room temperature, and heat it on a very gentle fire on low heat till most of the water in it vaporizes and the Shrikhand dries into a soft ball. Divide into smaller balls for stuffing.
Mix together equal quantities of Rawa and Maida, a pinch of salt, powdered cardamom, enough pure ghee or oil and knead with water into soft smooth dough.
Roll out and roast the Shrikhand Stuffed Polis. [You can either stuff, surround and roll; or roll two small polis slightly, apply the Shrikhand stuffing generously in between and roll out thinly].
