Rice - 3 cups Paneer - 400 gms Onions - 2 Tomatoes - 2 Cauliflower - 100 gms Carrots - 3 Potatoes - 2 Fresh beans - 50 gms Green peas - 50 gms Ginger-Garlic paste - 1/2 tsp Cinnamon - 1 inch stick Cloves - 4 Turmeric powder - 1/2 tsp Aniseed - 1/2 tsp Tomato sauce - 2 tbsp Mint leaves - little Coriander leaves - little Ghee - 1/4 cup Salt to taste Oil for deep - frying
Method :
1. Wash the rice and soak in water for 20 minutes. 2. Cut paneer into medium pieces. 3. Heat oil in a "Kadai", fry the paneer pieces till colour. Remove from oil and pour the tomato sauce to the fried paneer pieces and keep aside. 4. Dice all the vegetables into small pieces. 5. Cut onions and tomatoes finely. 6. Heat ghee in a pan, add cloves, cinnamon, ginger-garlic past and stir fry till smells is lost. 7. Add onions and tomatoes, fry for a minute. 8. Add diced vegetables, stir-fry for few minutes. Add soaked rice with 41/2 cups of fresh water and add turmeric powder and salt. Cook the mixture till upto 3 whistles. 9. Remove from fire and stir gently. Add coriander leaves, paneer pieces. Stir and keep simmer under fire for few seconds and serve hot.
