This is a quick hunger manager and takes approx 20 mins to make. The below ingredients make approximate 4 footlongs (please change quantity according to your taste and good sense. Im not a teaspoon, tablespoon kind of person)
Ingredients
Chicken boneless - 200gms
Pepper - as required
Salt - as required
Olive oil - half a cup
Cheese - slices as required
Mushrooms - 50 gms
Capsicums - one
Onion - one large
jalapenos - half a cup cup full
Mixed herbs (italian) - as required
Footlong buns - 4
Method
Rub in pepper and salt into th e chicken and marinate for 1/2 an hour (optional)
Take the chicken and microwave for 15 mins to partially cook, alternatively boil/steam/ pressure cook.
Take a pan and pour a 3 tablespoons of olive oil and sprinkle a bit of the herbs, add the chicken and using two sharp spatulas, shred it as it sautees. (something like making kotthu poratha) add the onions, mushrooms, capsicums, jalapenos and sprinkle some more mixed herbs (a teaspoon) and pepper (a teaspoon) and salt to taste.
if the mixture looks dry add some more olive oil. Take the footlongs and cut it so that it is split sideways. butter one side and toast if you like toasted bread. gather the chicken and vegetable mix into the shape of your footlong and arrange cheese slices on top. Use the spatula to scoop it up with the now melted cheese on top and place it in the footlong. Thats it.
reduce jalapenos and pepper for a less spicy version.
