Every year without fail I bake these shortbread cookies around Christmas time. All of us especially my children love them; my little one Sonia loves the dough too!

It is easy to make, tastes heavenly and when decorated definitely rouses the Christmas spirit in all of us.

I use a set of cookie cutters to get different shapes and size and then bake them in the oven.

There are umpteen different ways to prepare these shortbread cookies but this one is my favorite.

This indeed is special time of the year, a time also to think of the not so lucky people and children in our community.

Let us take this occasion to spread the message of love and tolerance to others.

Shortbread Cookies

Ingredients:  

  • ½ cup Corn starch

  • ½ cup icing sugar

  • 1 cup all purpose flour

  • 1 cup butter


Shortbread Cookies

Method:  

Sieve corn starch, all purpose flour and icing sugar into a large bowl. Add the butter and mix well with a wooden ladle to incorporate all the ingredients.

Roll the dough into quarter inch thickness on an ungreased cookie sheet; use the cookie cutter to get different shapes. Decorate with your choice of candies, sprinkles, colors etc.

Place them in a baking dish and bake in the oven at 300 degrees for 12-15 minutes.
