One of my colleague left for vacation and he left some overripe bananas for me to make banana bread. Everyone likes this bread, so thought of sharing with wonderful sulekhas friends.
Here's the recipe...
Ingredients:
2 cup plain flour
1/2 cup sugar
1/2 cup veggie, corn oil or butter
1 cup mashed ripe banana
1 tsp baking soda
1/2 tsp baking powder
1tsp cinnamon or cardamom powder
1/2 tsp salt
Handful of walnut or pecan
1/2 cup shredded carrots if you want to get some vitamin A.
Mix everything except oil first, add oil at last. Knead until everything is mixed properly. Don't overdo though....
Lightly grease loaf pan and pour the mixture. Bake at 350 F for 55 mins.

PS: Calories per slice is around 200 to 250.
