 A great veggie option that is filling, wholesome and fast to make!
 
A recipe for 2 pals or even 2 school-kids-at -heart grown-ups, great tiffin-time option and ideal for tea-time meal ideas!
 
 


Ingredients:
 
2 large, buns with tops cut-off halfway horizontally
2 large, boiled and broken-up uneven pieces of potatoes,
fresh coriander finely chopped
1 teaspoon ghee
mint and corinader chutney
a little imli chutney
1/4 teaspoon each of cumin seeds, salt, pepper, red chilli powder
a pinch of garam masala,
I small onion, finely chopped,
1green chilly, finely chopped.
 
Method:
 
Heat a griddle; add in 1/2 teaspoon of ghee and allow to sizzle for a few seconds before placing all four pieces of the buns on the griddle to roast. Press down for better browning. Let cook for 1/2 a minute before turning around for a few seconds to toast to a crisp and till the ghee releases a glow on the top covers of the bun. Take it off the griddle.
 
Now add the remaining 1/2 teaspoon ghee to the griddle; toss in the cumin seeds and let them splutter a few seconds before adding in the boiled pieces of potatoes. Lower the flame and let cook to an even disposition for a few minutes before adding in the remaining spices, saving the garam masala for the end (after about 2 minutes of browning).
 
Add garam masala to the potato mixture; mix chopped coriander in well. Keep on the griddle while you prepare the bun-base.
 
Smear a teaspoon of mint and coriander chutney on the lower halves of the buns; place half of the potato mixture on each bun-bottom (how naughty, but that's the way it is;) and pour a spoonful of tamarind chutney over the mixture before tossing in the chopped onions and green chillies over it . Then cover with the top-halves of the bun.
 
Serve instantly. Great to wolf down with chilled coke, warm masala tea or even the evening coffee curl-up on the window-seat comfort food time you need!!
 
Thinking of school and cheap tuck-treats is incomplete without the mention of bun tacks especially for those from the boarding schools in Nainital!
